Peanut
Butter Cookies
1 cup
of softened shortening (half butter or use butter flavored
shortening)
1 cup of peanut butter (smooth or crunchy style)
2 eggs
2 teaspoons of vanilla flavoring
1 teaspoon of baking powder
1-1/4 teaspoons of baking soda
½ teaspoon of salt
1 cup of granulated white sugar
1 cup of dark brown sugar (packed)
3 cups of all-purpose flour
Preheat Oven To 375 Degrees
Begin with a large mixing bowl; add the softened shortening
(remember ½ butter or use the butter flavored shortening).
Next add the peanut butter and blend the two together so well that
you
cannot tell one ingredient from the other. In a separate little bowl beat
the
two eggs together vigorously and add the eggs to your bowl of ingredients.
Blend all of the mixture together very well. Add the baking powder, baking
soda, salt and vanilla to the peanut butter mixture and blend together
well.
Add the granulated sugar and the brown sugar to the peanut butter mixture
and mix, mix, mix. When you feel the ingredients is well blended together…
then add the flour. The mixture will become very difficult to stir,
but blend the
ingredients together as well as you can, then, using your hands as you
would
if you were making bread, knead the mixture together very well. Lightly
grease
a large cookie sheet, and begin pinching off enough cookie dough to roll
into a
ball the size of a walnut. Flatten the ball with your hands slightly and
place the
prepared cookie on the cookie sheet. Place each cookie about 2-3 inches
apart.
Use a fork or a hand-held pastry cutter and slightly indent the top of
each cookie,
first one way and then the other, making a criss-cross design on top of
each cookie.
Bake the cookies for 10-12 minutes and immediately remove the cookies from
the
cookie sheet so that they can cool. The above mixture should make
approximately 35 to 50 cookies, depending on the size of each dough
ball.
